Mouth-watering smoky sausage and squash traybake is a cosy, soothing comfort meal

Put a twist on sausage by trying a meal that incorporates a bunch of different elements.

This mouth-watering sausage recipe is the perfect comfort food for a night in and can be shared as there is plenty to go around.

Your oven does all the work to prepare the autumnal traybake so you don’t have to exert all your energy.

The meal contains a seasonal butternut squash that will have you and your loved ones coming back for seconds and thirds.

Directions

Step 1

Heat your oven to 200C/180C fan/gas 6. Mix the fennel, paprika, cumin, oil, honey, tomato purée and harissa in a large bowl.

Put in the sausages, onions and squash, and toss gently with your hands to evenly cover everything.

Step 2

Put into a big roasting tin and spread out into an even coating. Roast for 30-40 mins, mixing periodically to assure everything is evenly browned.

Scatter over the parsley and serve your meal with steamed new potatoes and greens if you would like to.
